Chantilly Baskets and Cups

Ingredients

Directions

  1. Grease the inside and outside of molds with butter or oil to prevent sticking.

  2. Boil clarified sugar until it caramelizes.

  3. Dip ratafias into the caramel and arrange them around the inside of a dish.

  4. Cut more ratafias into squares, dip them in caramel, and place them cornerwise on the bottom layer.

  5. Continue stacking uncut ratafias on top of the square-cut cakes to create a multi-layered basket.

  6. Line the inside with wafer-paper and fill it with sponge biscuits, sweetmeats, and blanched almonds.

  7. Top with lightly piled whipped cream and garnish with rose leaves, candied violets, coloured comfits, or caramel sugar.

  8. Prepare oranges by cutting through the rinds to create a pattern, then remove the fruit with a vegetable scoop.

  9. Boil the orange peel baskets in thin syrup until they become transparent, about one hour.

  10. Carefully lift each basket out and place it on a perforated sheet or sieve to drain.
