Why it works: Biscuit and pistachio share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 53 recipes. Both carry nonanal, which smells fat, citrus. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine or egg white
Sets the bavaroise so the Charlotte holds its shape when turned out.
Whipped cream
Adds airy lightness and richness to the set bavaroise.
Pistachios
Provide the main flavour and pale green colour of the puree.
Colored glazed biscuits
Form the structured outer wall that holds the Charlotte's shape.
Pineapple
Adds moisture and a bright, slightly acidic fruit flavour.

The step that matters

Fold in the whipped cream gradually. Adding whipped cream in portions, folding gently, keeps its trapped air intact so the bavaroise stays light. Overmixing deflates the cream and makes the set dessert dense.

Swap the orange

How well each one fits the dish's main ingredients (cream, pineapple, biscuit, pistachio, syrup, egg, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against cream, pineapple, biscuit, pistachio, syrup, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
