The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Warm the butter with the caster sugar.

  2. Add the egg whites one at a time, mixing well after each addition.

  3. Thoroughly beat in the flour.

  4. Mix in the grated lemon rind, lemon juice, and milk.

  5. Fold in the candied citron.

Bake

  1. Line a cake tin with buttered paper, pour in the mixture, and bake at 350°F (175°C) for about one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to give the cake a tender, rich crumb.
Egg whites
Add structure and lift as they set in the oven.
Flour
Forms the structure that holds the cake together as it bakes.
Candied citron
Adds chewy pieces and a bright, sweet citrus flavour throughout the cake.

The step that matters

Adding the egg whites one at a time. Beating each egg white in fully before the next keeps the batter smooth and emulsified. Adding them all at once can cause curdling or a coarse, uneven crumb.

Swap the lemon
