The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify
Forms the body of the preserve and holds its shape as it cooks in the syrup.
Sugar
Sweetens the preserve and, as a concentrated syrup, helps preserve it.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Essence of ginger
Provides the warm, aromatic flavour that defines the preserve.

The step that matters

Simmer gently for 10 minutes. Vigorous boiling can break up the salsify pieces and cloud the syrup. A gentle simmer lets the sugar syrup penetrate slowly, keeping the pieces whole and tender.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
