Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster
Forms the main body of the cutlets and provides their delicate, sweet flavour.
Eggs
Bind the lobster mixture together and form a coating that helps breadcrumbs stick.
Breadcrumbs
Form a crisp, golden outer crust when fried in butter.
Butter
Fries the cutlets, adding richness and promoting browning on the outside.

The step that matters

Frying the cutlets in boiling butter. If the butter is not hot enough, the breadcrumb coating absorbs grease and turns soggy instead of crisping. Hot fat sets the coating quickly and browns it evenly.

Swap the mace

How well each one fits the dish's main ingredients (lobster, nutmeg, pepper, egg, anchovy, sauce, flour):

  1. Capersfits better
  2. Parsleyfits better
