What each ingredient does

Ox palates
Provide the main meat, which becomes tender through long gentle simmering in milk.
Milk
Gently cooks the palates and adds richness and a mild, creamy flavour to the dish.
Butter
Adds fat for richness and helps the surface brown during broiling.
Egg yolk (in the method)
Coats the palates so the breadcrumbs adhere and the surface browns golden.
Breadcrumbs
Form a crisp, golden coating when broiled, adding texture to the outside.

The step that matters

Broil gently until golden. Breadcrumbs and egg yolk brown quickly under direct heat, so watching closely prevents scorching before the coating is evenly golden.
