What each ingredient does

Fresh oysters
Form the dish's main body, becoming tender and briny when gently heated and steeped.
Clarified butter
Seals the oysters from air and adds rich, fatty flavour while they keep.
Lemon juice
Adds acidity that brightens the briny oyster flavour.

The step that matters

Heating the oysters until just before boiling. Boiling toughens oyster protein and makes the flesh rubbery, so the liquid should be heated only until it is just short of boiling and then removed from the heat.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, nutmeg, butter):

  1. Lemonthe original
  2. Figfits about as well
  3. Coconutfits less well
  4. Peachfits less well

Fit is the average pairing score against oyster, nutmeg, butter. Candidates are from the same food group and used in at least 100 recipes.
