Ingredients

Directions

The book says “a brisk oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Butter a shallow baking dish and line it with short-paste.

  3. Peel the peaches and cut them in half.

  4. Place the peach halves in the dish, an inch deep, and sprinkle with caster sugar.

  5. Cover with crust, moistening and pressing the edges together.

  6. Bake for 30 minutes.

  7. Remove from the tin, cut into squares, and sprinkle with caster sugar.

  8. Serve hot or cold.
