Preserved Peaches

Ingredients

Directions

Prepare

  1. Peel and quarter the peaches.

  2. Crack half the stones and blanch the kernels.

  3. Weigh the peaches and mix with the blanched kernels and sugar in a deep dish; cover and let sit overnight.

Cook and preserve

  1. The next day, place the peaches, kernels, sugar, and any juice into a preserving pan and boil until clear and soft, skimming off any scum.

  2. Once soft and clear, remove from heat and let cool slightly before transferring to jars.

  3. When completely cool, place a piece of white paper dipped in brandy on top of each jar and seal airtight.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit that softens and turns clear as it cooks into the preserve.
Powdered white sugar
Sweetens the fruit and draws out juice while helping the preserve set and keep.
Blanched peach kernels
Add a light almond-like aroma to the cooked peaches.

The step that matters

Skimming off the scum while boiling. Foam rising during boiling carries impurities that can cloud the preserve and affect its clarity and keeping quality, so it should be removed as it forms.

Swap the peach

How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Peachthe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
