What each ingredient does

Pistachios
Provide the main nutty flavour and pale green colour of the bavaroise.
Isinglass
Gelatin-like setting agent that firms the cream so it holds its molded shape.
Whipped cream
Adds air and richness, giving the set bavaroise a light, creamy texture.
Loaf sugar
Sweetens the mixture and helps draw out flavour when pounded with the nuts.
Boiling milk
Dissolves the isinglass and carries the nut flavour into the custard base.

The step that matters

Stir the base over ice until it just begins to set. Isinglass sets as it cools, so the base must thicken enough to hold the cream without setting into lumps. If it firms too much before folding in the whipped cream, the mixture will not blend evenly and the air in the cream will be lost.
