Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Bake whole potatoes

  1. Scrub the potatoes well and dry them with a cloth.

  2. Place the potatoes in a 400°F (200°C) oven and bake for 1 hour until soft.

  3. Fold the baked potatoes in a napkin on a dish and serve with butter and seasoning.

Make sliced potatoes

  1. Alternatively, peel and slice the potatoes into ½ inch thick slices.

  2. Layer the slices in a heatproof dish, spreading butter between layers.

  3. Dust with salt and pepper, then bake until tender in a 350°F (175°C) oven.

Garnish and serve

  1. Garnish with fried parsley and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy body that turns soft and fluffy when baked.
Butter
Adds richness and moisture, melting into the potato for flavour.

The step that matters

Bake until fully soft. Potato starch only becomes tender once the interior reaches cooking temperature for long enough. Pulling the potatoes early leaves a firm, chalky centre, so test with a knife or skewer before serving.

Swap the potato

How well each one fits the dish's main ingredients (butter, pepper, parsley):

  1. Carrotfits better
  2. Shallotfits about as well
  3. Potatothe original
  4. Capsicumfits about as well

Fit is the average pairing score against butter, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
