Potato Souffle

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Bake the potatoes

  1. Scrub and wash the potatoes, then bake them in a 400°F (200°C) oven for 45 minutes.

  2. Remove the potatoes, cut them in half lengthwise, and scoop out the pulp into a hot bowl.

Mash and fill

  1. Mash the pulp until firm, then mix in the butter, milk, egg whites, salt, and pepper.

  2. Fill the potato skins with the mixture and brush the tops with butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk and body that hold the soufflé mixture and its skins together.
Butter
Adds fat for richness and a smoother, softer mash, and browns the tops.
Milk
Adds moisture that loosens the mash so it spreads and fills the skins easily.
Egg whites
Add protein that helps the mixture set and bind as it cooks.

The step that matters

Scoop the pulp into a hot bowl and mash it while warm. Hot potato starch absorbs butter and milk more readily, so the mash becomes smoother and less likely to turn stiff or lumpy when the other ingredients are added.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, egg, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against butter, milk, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
