What each ingredient does

Rhubarb
Forms the bulk of the jam and provides its tart flavour.
Sugar
Sweetens the jam and helps it thicken and keep.
Lemon juice
Adds acidity that brightens the flavour and supports setting.
Almonds
Add texture and a nutty flavour as thin fillets.

The step that matters

Boiling for 45 minutes while stirring and skimming. Sugar-rich jam can scorch on the base of the pan, so constant stirring prevents burning. Skimming removes foam, giving a clearer, cleaner jam that thickens as water evaporates.
