What each ingredient does

Rice
Forms the body of the pudding, giving bulk and a soft, tender bite.
Egg yolks
Thicken the milk mixture into a smooth custard and add richness.
Milk
Forms the custard base, carrying flavour and moisture through the pudding.
Whipped cream
Adds fat and airiness, making the set pudding lighter and creamier.
Caster sugar
Sweetens the custard and helps soften the texture of the egg yolks.
Syrup
Sweetens the rice and moistens the grains.

The step that matters

Stir the custard over low heat without boiling. Egg yolks thicken through gentle heating; if the mixture boils, the yolks can scramble and curdle, leaving a grainy custard instead of a smooth one.

Swap the lemon
