  1. Wash the truffles and place them in a saucepan with enough white wine to cover them.

  2. Boil for 10 minutes with the lid on, then keep warm in the stock for 30 minutes.

  3. Remove the truffles, peel, and chop them finely.

Make and serve the omelet

  1. In a bowl, beat the eggs and mix in chopped parsley, salt, and pepper.

  2. Heat the butter in a frying pan, pour in the egg mixture, and cook until yellow but not brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Provide the main aroma and flavor that defines the dish.
Eggs
Set into a soft structure that wraps and holds the filling.
Butter
Adds richness and gives the omelet a golden surface when cooked.
White wine
Gently poaches the truffles and carries their aroma into the cooking liquid.

The step that matters

Cook the omelet until yellow but not brown. High heat or long cooking makes egg proteins tighten and brown, leaving the omelet dry and rubbery. Gentle heat keeps it tender and moist around the truffle filling.

Swap the parsley

How well each one fits the dish's main ingredients (truffle, white wine, egg, pepper, butter):

  1. Parsleythe original
  2. Tarragonfits about as well
  3. Thymefits about as well
  4. Nutmegfits less well

Fit is the average pairing score against truffle, white wine, egg, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
