Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and assemble

  1. Preheat the oven to 400°F (200°C).

  2. Fill a pie dish with layers of veal and ham, seasoning each layer with pepper and salt, and adding slices of hard-boiled eggs.

  3. Pour in gravy made from veal bones, flavored with mushroom powder and cucumber ketchup.

  4. Cover with puff pastry, trimming the edges and pressing them together.

Bake and serve

  1. Cut a hole in the center of the crust and decorate with pastry.

  2. Bake for 1 hour.

  3. Before serving, pour ½ cup of cream through the hole.

What each ingredient does

Veal
Forms the main meat layers, giving the filling its body and savory flavor.
Ham
Adds salty, savory flavor that seasons the meat layers.
Eggs
Hard-boiled slices add firm texture and richness to the filling.
Puff pastry
Forms a flaky, golden crust that seals the filling as it bakes.
Mushroom powder
Adds deep, earthy umami flavor to the gravy.
Cream
Poured in before serving, it adds richness and moisture to the pie.

The step that matters

Pouring in the cream before serving. Cream is added after baking so it stays fresh and smooth. Heating cream for a long time can cause it to separate or turn grainy, so it should be poured in just before serving.
