Why it works: Flour and egg are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 106,462 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Whiting
- The main fish, which firms and turns flaky and tender when fried.
- Flour
- Dry coating that helps the egg adhere and promotes an even golden surface.
- Eggs
- Binder that makes the breadcrumbs stick to the fish during frying.
- Breadcrumbs
- Crisp outer coating that browns in the hot fat and protects the delicate fish.
- Lard or clarified fat
- Frying medium that conducts high heat, browning the coating and adding richness.
The step that matters
Heating the fat until hot. If the fat is not hot enough, the breadcrumbs absorb it and turn greasy instead of crisp. Very hot fat seals the coating quickly, so the fish cooks through without soaking up oil. The bread test shows when the fat is ready.
