Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Mixed with butter to thicken the sauce into a smooth, creamy body.
Butter
Combined with flour to form a roux that helps thicken the sauce and adds richness.
Cream
Adds richness and a smooth, velvety texture to the finished sauce.
Calf's head
Provides the main meat, whose gelatin enriches the body of the fricassee.

The step that matters

Stir in the cream without boiling. Cream can curdle or separate when it boils, especially with acidic or salted liquids. Adding it off the heat or at a gentle simmer keeps the sauce smooth and glossy.
