Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling as they set, giving the pudding a rich, custard-like texture.
Butter
Adds fat and richness, giving the filling a smooth, tender mouthfeel.
White sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavour that cuts through the richness of the yolks and butter.

The step that matters

Bake until set. Egg yolks set through gentle heat as their proteins coagulate. Underbaking leaves the filling runny, while overbaking can make it grainy or curdled, so watch for a firm centre rather than relying on time alone.
