Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Spread butter on the bread slices.

  2. Layer the bread in a dish, adding currants and sliced citron, orange, or lemon between layers.

Make the custard

  1. In a bowl, whisk together milk, eggs, pimentos, and ratafia.

  2. Pour the custard over the layered bread to soak it.

  3. Let it sit for at least 2 hours before baking.

Bake

  1. Optionally, create a paste around the edge of the dish for decoration.

  2. Bake in a 350°F (175°C) oven until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard, binding the milk into a soft, sliceable structure as it bakes.
Milk
Forms the liquid custard that soaks into the bread and gives the pudding its moisture.
Bread
Absorbs the custard and provides the body of the pudding.
Butter
Adds richness and fat, helping the bread brown lightly on the surface.

The step that matters

Letting the bread soak before baking. Dry bread needs time to absorb the custard fully; if it bakes too soon, the centre can stay wet and uneven while the top over-browns.

Swap the currant

How well each one fits the dish's main ingredients (bread, butter, orange, lemon, milk, egg):

  1. Vanillafits better
  2. Figfits better
  3. Raspberryfits better
  4. Currantthe original

Fit is the average pairing score against bread, butter, orange, lemon, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
