Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Dissolves when boiled and sets the cream into a firm, sliceable gel as it chills.
Cream
Provides richness and a smooth, creamy body to the set dessert.
Raspberry juice
Supplies the main flavour and pink colour to the dessert.
Sugar
Sweetens the dessert and draws more juice out of the raspberries.

The step that matters

Adding milk to prevent curdling. Raspberry juice is acidic, and acid can make cream curdle when they are combined. Adding milk, as the method suggests when desired, helps keep the mixture smooth.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar, milk, brandy):

  1. Vanillafits better
