  1. Gather raspberries on a dry day, mash them, and strain through a jelly bag to obtain the juice.

  2. In a saucepan, combine the raspberry juice and pounded sugar, stirring until the sugar completely dissolves.

  3. Bottle the mixture in pint and half-pint bottles, filling them to the neck.

Serve

  1. When ready to serve, mix the raspberry syrup with rich cream and additional sugar, then whisk until thick.

  2. Serve in a glass dish or custard cups.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberry juice
Provides the main raspberry flavour and colour, and the liquid base of the syrup.
Pounded loaf sugar
Sweetens the juice and helps preserve the syrup when it is bottled.
Rich cream
Adds fat and body, and whisks into a thick, creamy texture.

The step that matters

Whisking the cream with the syrup. Cream thickens as its fat globules trap air and link together when whisked. Whisking too long can turn it grainy or butter, so stop once it holds soft peaks and is thick.

Swap the lemon

How well each one fits the dish's main ingredients (raspberry, sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Peachfits better

Fit is the average pairing score against raspberry, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
