What each ingredient does

Isinglass
Gelatin-like setting agent that firms the liquid into a sponge that holds its shape.
Lemon juice
Adds acidity and bright lemon flavour to the set mixture.
Raspberry jam
Adds sweetness, fruit flavour and colour to the sponge.

The step that matters

Whisking the set mixture until fluffy. Whisking must happen while the isinglass mixture is cooled but still liquid enough to trap air. Whisking it too early or too late stops it foaming into a light, airy sponge.

Swap the raspberry

How well each one fits the dish's main ingredients (lemon, sugar):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Raspberrythe original

Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
