Plum Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter and sugar together.

  3. Beat the egg yolks and whites separately, then gradually add the yolks to the butter mixture.

  4. Mix in the flour and spices, then beat well for nearly an hour.

  5. Fold in the currants, lemon peel, white wine, and brandy.

  6. Pour the mixture into a cake pan lined with buttered paper.

  7. Bake in the preheated oven until done.
