Broccoli and Cauliflower

Ingredients

Directions

Prepare

  1. Remove the outer leaves and cut the main stalk close.

  2. Pare the skin from the large stalks.

  3. Wash the vegetables and soak them in a pan of saltwater, heads down, for 1 hour.

Boil and serve

  1. Bring a large pot of water to a boil and add 1 tablespoon of salt.

  2. Remove any scum that rises when the water boils.

  3. Add the broccoli and cauliflower, flower side down, and boil for 15 to 20 minutes until the stalks are tender.

  4. If the heads are uneven in size, add the larger ones first.

  5. Drain in a colander and serve with melted butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Broccoli
Its stalks and florets soften as they boil, becoming tender enough to eat.
Cauliflower
Its dense florets and stalks cook through and turn tender during boiling.
Melted butter
Adds richness and fat to the mild cooked vegetables when served.

The step that matters

Add the larger heads first. Uneven heads cook at different rates, so starting the larger ones first helps them finish tender at about the same time as the smaller ones.
