Why it works: Mace and nutmeg are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 6,557 recipes. Both carry myristicin, which smells spice, warm. The science ↓
To Pot Lobsters
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the lobster
Half-boil the lobsters.
Remove the meat and cut the meat into small bits.
Season and bake
Season the meat with mace, white pepper, nutmeg, and coarse sea salt.
Press the seasoned meat into a pot.
Cover the meat with butter.
Bake at 350°F (175°C) for half an hour.
Add the spawn to the pot.
Finish with spawn butter
Once cooled, remove the lobster.
Place it into pots with some of the butter.
Beat additional butter with some of the spawn in a mortar.
Mix the beaten butter and spawn with enough to cover the pots.
Strain the mixture.
If desired, add cayenne to the butter before pouring it over the lobster.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lobsters
- Provide the main meat, which sets firmly and becomes tender when gently baked in butter.
- Butter
- Adds richness and moisture, sealing the meat and carrying flavour through the dish.
- Mace
- Adds a warm, delicate aroma that complements the sweetness of the lobster.
- Nutmeg
- Contributes a warm, aromatic spice note that rounds out the seasoning.
The step that matters
Half-boil the lobsters. Boiling only partly cooks the lobster, so the meat finishes gently in the oven. Overcooking at this stage leaves it tough and dry once baked.
Swap the white pepper
How well each one fits the dish's main ingredients (lobster, mace, nutmeg, butter):
- Cinnamonfits better
- Clovefits better
- Allspicefits better
