What each ingredient does

Grated bread
Soaked in milk, it forms the soft, absorbent body of the pudding.
Eggs
Bind the mixture and set as it cooks, giving the pudding structure.
Butter
Adds richness and a moist, tender texture to the pudding.
Sugar
Adds sweetness and contributes to the pudding's flavor balance.
Currants
Add chewy pockets of sweetness and fruit flavor throughout.
Flour
Helps thicken the mixture so it holds together when boiled.

The step that matters

Tying the cloth. The cloth must be tied tightly over the basin so the pudding keeps its shape and water cannot seep in during boiling. A loose cloth lets water into the pudding and can make it soggy and misshapen.

Swap the currant

How well each one fits the dish's main ingredients (bread, milk, egg, flour, butter, sugar, almond):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against bread, milk, egg, flour, butter, sugar, almond. Candidates are from the same food group and used in at least 100 recipes.
