What each ingredient does

Eggs
Set the custard and give the pudding its structure as they cook.
French roll
Crumbs soak up the liquids and thicken the mixture into a soft body.
Fresh butter
Adds richness and a smooth, tender texture.
Cream or milk
Provides the liquid and moisture that gives the pudding its custard texture.

The step that matters

Adding the eggs after the cream cools. Eggs scrambled by very hot liquid turn grainy instead of smooth. Letting the mixture cool before adding the beaten eggs and lemon juice helps them blend in and set evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (almond, rose, syrup, brandy, butter, cream, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against almond, rose, syrup, brandy, butter, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
