Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken fillets
Provide the main lean meat, which turns tender and white when cooked gently in butter.
Butter
Carries the heat for gentle cooking and adds richness and a rounded flavour to the chicken.
Young peas
Add sweetness and a soft, tender texture to the dish.
Butter sauce
Adds moisture and richness to the finished chicken.
Lemon juice
Adds acidity that brightens the rich butter and sauce.

The step that matters

Cook the fillets over medium heat for 1 minute. Shaking and turning keep the butter from browning and the chicken delicate. Too much heat or time can toughen the meat and colour it, changing the pale, gentle texture this dish depends on.
