Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Clarified sugar
- Provides sweetness and the body of the syrup that the jelly is built on.
- Clarified isinglass
- Gelatin-like protein that sets the liquid into a firm, sliceable jelly when cooled.
- Lemon juice
- Adds sharp acidity that balances the sweetness and gives the jelly its flavor.
- Lemon rind
- Contributes aromatic lemon oils that scent the jelly.
The step that matters
Skim the surface well before adding isinglass. Skimming removes foam and impurities that would cloud the jelly and spoil its clarity. Isinglass is added only after the syrup is clean so it sets evenly.
