Why it works: Peach and lemon work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 947 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Peach Jelly
Ingredients
Directions
Prepare the peaches
Cut the peaches in half, remove the stones and peel them.
Make the syrup
In a pot, combine the sugar with enough water to dissolve it and bring to a boil.
Once boiling, skim the surface and add the peaches and broken kernels.
Boil gently for 10 minutes, then remove 4-5 peach halves and set aside on a plate.
Continue boiling the remaining peaches for another 10 minutes.
Add the lemon and isinglass
While boiling, peel the lemons and squeeze the juice through a silk sieve into a bowl.
Add the peach liquid to the lemon juice, then mix in the isinglass, straining it through the sieve 2-3 times.
Mold and set
Fill a mold halfway with the jelly mixture, let it set, then add the reserved peach halves.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Peaches
- Provide the main fruit flavor and soft body to the jelly.
- Sugar
- Adds sweetness and helps the jelly hold its set and clear texture.
- Lemons
- Add acidity that brightens the peach flavor and balances the sweetness.
- Isinglass
- A gelling agent that sets the liquid into a firm jelly as it cools.
- Peach kernels
- Add a subtle almond-like aroma to the peach flavor.
The step that matters
Straining the jelly mixture. Isinglass sets as it cools, so it must be fully dissolved and mixed in. Straining 2-3 times removes solids and cloudiness, giving a clear jelly that sets evenly.
