What each ingredient does

Egg yolks
Thicken the soup and add richness when stirred in with cream.
Cream
Adds fat and richness, softening the flavor and body of the soup.
Rice
Absorbs liquid and softens, adding body and making the soup heartier.
Potato
Breaks down while stewing, adding starch that gives the soup body.

The step that matters

Stirring the egg yolk and cream into the soup. Egg yolks can scramble and curdle if they meet very hot liquid directly. Beating them with cream first and stirring gently into the soup helps them blend smoothly and thicken it evenly.
