Stewed Beetroot

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Bake the beetroot in an oven at 400°F (200°C) until tender.

  2. Once cooled, scrape off the skin and slice the beetroot.

  3. Place the slices in a saucepan and cover with gravy.

  4. Stew gently for 30 minutes.

  5. Thicken the sauce with cream.

  6. For a brighter color, pound some slices in a mortar and extract the juice.
