Cabinet Pudding

Ingredients

Directions

Prepare the mold

  1. Beat the eggs with a little sugar.

  2. Butter a mold thoroughly and arrange the cherries or raisins in a pattern around the top and sides.

  3. Break each cake into four pieces and place them close to the fruit to keep it from falling.

Steam and serve

  1. Fill the mold with custard.

  2. Tie a cloth over the top of the mold.

  3. Place the mold in a saucepan with boiling water up to the top of the mold, ensuring the lid fits tightly to retain steam. Boil for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, binding the cakes and fruit into a firm pudding.
Sponge cakes or biscuits
Soak up the custard and give the pudding its body and crumb.
Dried cherries or sultana raisins
Add chewy sweetness and fruit flavour, showing on the top when turned out.

The step that matters

Keep the water boiling and the lid sealed. Steam must stay steady around the mold. If the water boils dry or the lid leaks, the custard cooks unevenly and can turn watery or rubbery as the eggs set.

Swap the raisin

How well each one fits the dish's main ingredients (biscuit, egg, sugar, butter):

  1. Vanillafits better
  2. Raisinthe original
  3. Lemonfits about as well
  4. Coconutfits about as well

Fit is the average pairing score against biscuit, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
