Moiling Fish

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Soak the fish in a mixture of salt and water for 5 to 10 minutes before cooking.

  2. Fill a fish kettle with water and bring it to a boil.

  3. Place the fish in the kettle, ensuring it is just over half covered with water.

  4. Cook the fish until done, then carefully remove it using the fish strainer.

  5. Serve the fish on a plate, optionally with a clean napkin underneath to absorb moisture.
