Ingredients

Directions

Prepare the oysters

  1. Open the oysters and preserve their liquor, straining it through a cloth or sieve.

  2. Remove the gills from the oysters and place them in a stewpan with their liquor.

  3. Simmer for about 5 minutes to scald, but do not boil.

  4. Remove the oysters, cut them into small pieces, and return them to the stewpan with their liquor.

Make the stew

  1. Add the anchovy essence and enough milk or cream to cover the oysters.

  2. Include the lemon slice, mace, pepper, and salt.

  3. Mix in the butter and flour to thicken the sauce.

  4. Boil for about 10-15 minutes, stirring constantly.

  5. Remove the lemon and mace, squeeze lemon juice into the sauce, and fill your patties.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main body and briny flavour of the stew.
Milk or cream
Forms the liquid base that carries the stew's richness and mild sweetness.
Butter and flour
Thicken the sauce, giving it body and a smooth, coating texture.
Anchovy essence
Adds a deep savoury, salty note that rounds out the oyster flavour.

The step that matters

Mix in the butter and flour, then boil while stirring constantly. Flour thickens only when heated, and stirring keeps starch dispersed so the sauce stays smooth rather than lumpy or scorched on the bottom of the pan.

Swap the mace

How well each one fits the dish's main ingredients (oyster, anchovy, milk, lemon, pepper, walnut):

  1. Parsleyfits better
  2. Celeryfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against oyster, anchovy, milk, lemon, pepper, walnut. Candidates are from the same food group and used in at least 100 recipes.
