Directions

The book says “a warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tapioca

  1. Pound the tapioca until fine.

  2. In a saucepan, combine the tapioca and milk, and simmer gently until it softens to a pulp.

Make the custard

  1. Whisk the eggs and egg yolks until frothy.

  2. Add the butter, brandy, sugar, and nutmeg to the egg mixture.

  3. Mix the egg mixture with the hot tapioca.

Bake

  1. Transfer to a baking dish and bake in a warm oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and thickens with the milk to give the pudding its body and soft, creamy texture.
Eggs
Set the custard as they cook, giving structure and a rich, tender texture.
Egg yolks
Add richness and fat, making the custard smoother and more tender.
Milk
Provides the liquid that the tapioca absorbs, forming the base of the pudding.
Butter
Adds fat for richness and a smooth, rounded mouthfeel.

The step that matters

Mix the egg mixture with the hot tapioca. If the hot tapioca is added too quickly or the eggs are not well whisked, the eggs can scramble. Adding the hot mixture gradually while stirring gently keeps the custard smooth before it is baked to set.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, butter, brandy, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits less well
  4. Gingerfits less well

Fit is the average pairing score against milk, egg, butter, brandy, sugar. Candidates are from the same food group and used in at least 100 recipes.
