Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped into a froth, it gives the dessert its light, airy body.
Isinglass
A gelatine-like setting agent that firms the mixture so it holds its shape.
Raspberry jam
Supplies the main flavour, colour and sweetness of the dessert.
Lemon juice
Adds acidity that brightens the sweet raspberry flavour.

The step that matters

Whisking the cream to a strong froth. Cream must be whisked enough to trap air for lightness, but not so far that it turns grainy or separates. Folding it gently into the jam keeps the air bubbles intact.

Swap the lemon
