Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the main bulk and fresh, mild flavour of the soup.
Potatoes
Break down during long cooking to give the soup body and a thicker texture.
Flour
Thickens the liquid when cooked with butter, giving the soup a smoother body.
Butter
Carries the frying of the vegetables and adds richness and flavour.
Onions
Build savoury depth in the soup as they soften and sweeten during frying and stewing.

The step that matters

Thicken the soup with a mixture of flour and butter. Flour must be cooked with the butter and whisked into the hot soup to avoid lumps; adding it raw or cold leaves clumps and an uneven texture.

Swap the mint
