What each ingredient does

New potatoes
Form the main body of the dish, cooking to a tender, starchy interior.
Nutmeg
Adds a warm, aromatic flavour to the optional white sauce.

The step that matters

Cook until tender, not longer. Boiling new potatoes only a few minutes is enough to become tender; overcooking makes them break apart and turn watery and mealy as starch leaches out, so test them with a knife as they cook.
