Why it works: Pepper and mace are a kitchen classic. They rank in the top 16% of all ingredient pairs, and cooks put them together in 12,257 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Oyster Pie
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Open the oysters.
Separate the oysters from the liquor, straining the liquor.
Remove the gills from the oysters and parboil them.
Parboil the sweetbreads, then slice them.
Assemble and bake
Layer the oysters and sweetbreads in a baking dish, seasoning lightly with salt, pepper, and mace.
Add ½ cup of oyster liquor and ½ cup of veal gravy to the dish.
Bake in a slow oven at 300°F (150°C).
Finish and serve
Before serving, warm 1 cup of cream, a little more oyster liquor, and 1 cup of white gravy, but do not boil.
Pour over the pie.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Oysters
- Provide the main seafood flavour and tender body of the filling.
- Sweetbreads
- Add a soft, rich texture that contrasts with the oysters.
- Cream
- Adds richness and smoothness to the sauce poured over the pie.
- Veal gravy
- Adds savoury depth and moisture to the filling.
- Oyster liquor
- Adds moisture and concentrated oyster flavour to the dish.
The step that matters
Warming the cream sauce without boiling. Boiling cream can cause it to separate and turn grainy, and overheated sauce can toughen the delicate oysters. Gentle warming keeps the sauce smooth and silky.
Swap the mace
How well each one fits the dish's main ingredients (oyster, veal, cream, pepper):
- Celeryfits better
- Nutmegfits better
- Parsleyfits better
- Macethe original
Fit is the average pairing score against oyster, veal, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
