What each ingredient does

Cauliflowers
Forms the crisp, firm body of the pickle once salted and drained.
Cold vinegar
Provides the acidity that preserves the cauliflower and gives the pickle its sharp flavour.
Coarse sea salt
Draws out moisture from the cauliflower, firming its texture before pickling.
Turmeric
Gives the pickle its yellow colour and an earthy, bitter aroma.
Coriander seed
Adds warm, citrusy aroma that flavours the pickling liquid.

The step that matters

Scalding without boiling. Scalding in salt water softens the cauliflower just enough to pickle while keeping it firm. Boiling would overcook it, making it soft and mushy, and the cooler cover helps keep its pale colour.
