Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

Make the base

  1. Boil 1 gallon of water with 3 lbs of sugar for 1 hour.

  2. Pour the hot mixture over the peel of 4 lemons.

  3. Make a syrup by boiling the juice of 4 lemons with ½ lb of sugar.

  4. Mix the syrup with the lemon peel mixture when cool.

Ferment and bottle

  1. Cover with a toast and add yeast; let it stand for 2 days to ferment.

  2. Transfer to a barrel, keeping it filled until fermentation subsides.

  3. Seal the barrel and bottle the wine after 3 months.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Feeds the yeast during fermentation and adds sweetness to the finished wine.
Yeast
Converts sugar into alcohol and carbon dioxide during fermentation.
Lemon peel
Adds aromatic oils and flavour to the liquid as it steeps.
Lemon juice
Adds acidity and bright lemon flavour to the wine.

The step that matters

Keeping the barrel filled until fermentation subsides. Topping up the barrel keeps air from the surface of the liquid. Exposure to air lets spoilage microbes and oxidation affect the wine, so the barrel should be kept full.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, syrup):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
