Tripe

Ingredients

Directions

  1. Cut the boiled tripe into pieces about three inches long.

  2. Dip the tripe pieces into a mixture of beaten egg and a few bread crumbs, or into a batter made from egg, milk, and flour.

  3. Fry the tripe pieces until they are golden brown.

  4. Remove the tripe from the pan and place on a hot strainer to drain.

  5. Transfer the drained tripe to a dish, garnish with parsley, and serve with melted butter.
