To Roast Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place the lamb joint in the oven and roast until white gravy begins to drop from it, starting at a lower temperature.

  3. Finish roasting at a higher heat.

  4. Serve the lamb with a little gravy made with water, adjusting the amount based on the size of the joint.

  5. If desired, sprinkle finely minced parsley over the lamb five minutes before serving.

What each ingredient does

Lamb joint
The main protein; slow roasting firms its texture while the higher finishing heat browns its surface.

The step that matters

Finish roasting at a higher heat. Starting low lets the joint cook evenly through its centre. Raising the heat at the end browns the surface, since browning needs high dry heat, so the joint must be watched to avoid over-browning.
