Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm, wobbly gel as it cools.
Cream
Adds richness and a smooth, velvety body to the set dessert.
Loaf sugar
Adds sweetness that balances the sharpness of the lemon.
Lemon
Adds acidity and aroma from the juice and the rind.

The step that matters

When cold, add the cream and stir well.. Adding cream to a hot, acidic lemon mixture can cause it to curdle and look grainy. Letting the base cool first keeps the cream smooth and evenly blended.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
