Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the acidity and fragrant oil from the rinds, plus the lemon juice.
White sugar
Adds sweetness and balances the lemon's sharp acidity.
Isinglass
Gelatin-like protein that sets the liquid into a firm jelly as it cools.
Egg whites
Coagulate when heated, trapping cloudy particles so they can be skimmed off for a clear jelly.
Turmeric
Gives the jelly its yellow color.

The step that matters

Boil for 5 minutes without stirring.. The heated egg whites coagulate into a raft that gathers cloudy particles and foam. Stirring breaks this raft apart and leaves the jelly cloudy, so it must be left undisturbed until the foam is skimmed off.

Swap the turmeric

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits better
  4. Turmericthe original

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
