What each ingredient does

Eggs
Bind the mixture and set it into a custard-like texture when baked.
Gooseberry juice
Provides the tart fruit flavour and moisture that forms the body of the pudding.
Butter
Adds richness and fat, giving a softer, more tender texture.
Rolls or naples biscuits
Dry crumbs that soak up liquid and help the pudding hold together.

The step that matters

Beating and straining the eggs. Straining removes the cords and lumps of egg white, so the mixture bakes smooth rather than streaked or grainy.
