Raspberry Cream

Ingredients

Directions

Prepare the raspberry juice

  1. Mash the raspberries gently and let them drain.

  2. Sprinkle a little sugar over the raspberries to produce more juice.

  3. Combine the raspberry juice with cream and sweeten to taste.

  4. If desired, add milk to prevent curdling, but it's best to use raspberry jelly instead of jam if fresh fruit is unavailable.

Make the cream

  1. Boil isinglass shavings in 3 pints of mixed cream and milk for 15 minutes until melted, then strain into a basin.

  2. Once cool, mix in raspberry juice or syrup, sweeten, and add brandy.

  3. Whisk until three parts cold, then pour into a mold and refrigerate until fully set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, creamy body to the set dessert.
Sugar
Sweetens the dessert and draws juice out of the raspberries.
Raspberry juice or syrup
Supplies the main fruit flavour and colour.
Isinglass shavings
Gelatin-like setting agent that firms the cream so it holds its shape when chilled.

The step that matters

Whisking the cream while it is cold. Isinglass sets only as it cools, so the mixture must be cold enough to thicken before it is whisked. Whisking into a warm mixture can prevent a light, even set and cause the cream to separate.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar, brandy):

  1. Vanillafits better
  2. Apricotfits about as well
  3. Strawberryfits about as well
  4. Raspberrythe original

Fit is the average pairing score against cream, sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
