A Charlotte of Apples

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dish

  1. Cut thin slices of white bread to cover the bottom and line the sides of a baking dish.

  2. Rub the dish with butter.

Layer and press

  1. Layer thin slices of apples in the dish, sprinkling sugar and bits of butter between layers until full.

  2. Soak additional thin slices of bread in warm milk, then place a plate and weight on top to press the bread onto the apples.

Bake

  1. Bake in a slow oven at 300°F (150°C) for three hours.

What each ingredient does

White bread
Forms the soft outer shell that holds the apples together while baking.
Butter
Adds richness and helps the bread brown and crisp at the edges.
Apples
Provide the main fruit filling, softening and releasing moisture as they bake.
Powdered sugar
Sweetens the apples and helps them caramelize slightly as they cook.
Milk
Moistens the bread so it softens and binds to the apples.

The step that matters

Pressing the bread onto the apples. Weighting the milk-soaked bread keeps the layers compact and in contact with the fruit. Without pressure, the charlotte can collapse or bake unevenly when the apples release moisture.

Swap the apple

How well each one fits the dish's main ingredients (bread, butter, sugar, milk):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well

Fit is the average pairing score against bread, butter, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
